from the Earmark Recipe Box - Individual Easy, Key Lime, Cream Cheese Danish!
This recipe is perfect for a lovely Sunday breakfast or perhaps a mothers day brunch... It is simple and delicious and looks like it took all day!
Key Lime Cheese Danish
You will need 6 individual pie pans or make smaller danish by using a muffin pan.
Ingredients:
2 tubes of refrigerated crescent rolls, regular size
1 tube of refrigerated biscuits
2 (8 ounce) packages of cream cheese (we do one light, one regular)
1/2 cup sugar
1 egg yolk (keep egg white for end)
2-3 key limes for juice and zest (or more depending on personal preference)
Preheat the oven to 350°
Spray the inside bottom and walls of 6 individual pie pans (aluminum pans from the grocery store work perfectly). Spread two crescent triangles into each pan and along sides to create the bottom crust.
Place the 6 pans on a cookie sheet and bake for 4-5 minutes, they should not be completely cooked, just lightly browned.
While the crusts are baking, let's make the mix!
Add together, the cream cheese, sugar, egg yolk and the lime juice in a mixing bowl. Mash together with a fork and then stir the ingredients together. The mixture will look chunky, that is ok. Voila you are done with the filling!
Remove the 6 pies from the oven. Fill them with the cream cheese mixture. Once you have them all filled, take one biscuit and stretch it out a little then place it over the filled pans, it should sit nicely on top of the filling.
Once all the tops are placed, lightly brush each Danish with the egg white. This will give the crust a nice finished glossy look.
Now place the 6 filled and covered pans into the oven on the same cookie sheet and cook for 12-15 minutes until the tops and biscuits are golden brown.
Once they are done remove them from the oven and let cool for 5 minutes. Once cooled, remove them each from the pie pans and place on their own plates, you can cut a slice of key lime or perhaps raspberries or some other fruit for garnish.
Final step, Enjoy! These Danish are easy and great for any day! Keep in mind that you can alter the recipe to better suit your tastes. Do you want to eliminate the lime? No problem, exchange with any flavor or with a teaspoon of Vanilla for a more traditional cheese danish. Drizzle a little chocolate over the top or maybe a fruit drizzle...

Our Mini Adventure! From San Diego to Sonoma!
Five days can make all the difference in the world! In need of a getaway we packed our bags threw them into the impala and off we went... to see what awaited us along our little journey. There is nothing better than driving through new places, seeing new land, especially wide open land with stunning scenery... It made me realize just how beautiful the US can be, very refreshing and extremely needed! Stopping whenever we wanted, doing anything we pleased, it felt so wonderful to just be out of the house, out of the office and into the world!
Mentally, this trip was phenomenal, I do not think I even realized how burnt out I was getting, but now, oh i feel so much better, yet so sad to not be traveling... it definitely brought back the travel bug (i had managed to quiet this stupid little bug the past couple of months), but now it's back in full force! Re-planning our trip to Thailand is already in the works, argh... now all I need is more money and more time and off we go :)

Self Portrait on Moonstone Beach

Bridgette and I have a long-standing tradition of taking self-portraits at any place we visit. We have a collection of them, going all the way back to when we first started dating in Brooklyn about ten years ago. From Disney World, all over Europe, to this most recent one at Moonstone Beach in California. At the southern end of the awesome stretch of Highway 1 that leads to Big Sur and Monterey, Moonstone Beach is home to many Harbor Seals that lay out on its shining black rocks.
For this photo I used Photoshop to enhance the colors and create the aged, distressed look. Happy Birthday Bridgette! Thanks for the great weekend!
